Every year we germinate Salvia hispanica "chia" seeds for class,
a seedling with historical, economic, and nutritional significance.
Plus, most students have heard of "Chia Pets"
so they are an interesting herb to study.
Of course one of the Chia Pets we use is a kitty-cat :).
